Granola Bar Recipe // Ambassador Kim Sosnick

Just coming in from an intense SUP session and feeling your stomach growling? Read below as PIF Ambassador Kim Sosnick shares her favorite post-SUP recipe!

Amazing Granola Bars
4 Cups Rolled Oats
1 Cup Flour (your preference, I use almond)
1 tsp Baking Soda
½ tsp Salt
1 tsp Cinnamon (I use way more)
1 stick Butter (or alternative)
½ Cup Coconut oil (again your preference)
½ Cup raw Sugar
½ Cup Honey1
2 tsp Vanilla Extract
1 Cup Chopped Nuts or Seeds or any combination you like
1 Cup Dried Fruit of your choice (raisins, cranberries, apricots, blueberries)
OPTIONAL
1 12 oz  package organic chocolate chips (I half this if I use it at all, it is plenty) for those of you who do not get Lacie’s Raw chocolate, YUM

1.preheat oven to 325 degrees
2.prepare a half sheet pan with parchment paper that you sprayed with oil
3.in a large bowl combine OATS, FLOUR, BAKING SODA, CINNAMON & SALT mix to combine.
4.in a stand mixer cream the butter, honey, sugar, vanilla until light and creamy looking.
5.add the DRY ingredients to the mixer and combine thoroughly, then add the fruit and nuts and mix until just combined.
6.pour mixture into prepared pan and spread it out with a spatula. Press the mixture down firmly (I use a flat pancake flipper)
7.bake mixture for 15 min then remove from oven and repeat compression step, do this an additional 2 times. Giving you a bake time of 45 min total, when you finally take it out at the end compress for last time.
8.scatter chocolate chips evenly on top of granola, the heat melts them and you can spread it out evenly with your spatula
9. after cooled for 10 min cut with a pizza cutter or sharp knife while in the pan and sit to let cool and to allow chocolate to harden.
10.when completely cooled wrap in parchment paper and store in loose closed container.
11.not sure how long they last, in my house it averages a day before they are all gone.
